Ingredients

  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 1 head broccoli cut into florets
  • 4 pieces boneless and skinless chicken breasts cut into 1-1/2 inch strips
  • 1 teaspoon dried basil or 1 tablespoon fresh basil
  • 2 cloves garlic minced
  • 1/2 cup chicken broth
  • 1 teaspoon dried oregano or 1 tablespoon fresh oregano
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme
  • 1/4 teaspoon kosher or sea salt
  • 1/4 teaspoon black pepper

Equipment

  • Large skillet
  • Wooden spoon
  • Chef’s Knife
  • Cutting board

Method

  1. Start by washing all your produce. Chop the onion and broccoli florets into bite-sized pieces, and cut the chicken breasts into 1-1/2 inch strips. Mince the garlic cloves and set everything aside.
  2. In a large skillet, heat the olive oil over medium heat. Once shimmering, add the chopped onion and sauté for about 2-3 minutes until it becomes translucent and fragrant.
  3. Add the chicken strips to the skillet. Season with salt, black pepper, basil, oregano, and thyme. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
  4. Once the chicken is cooked, add the minced garlic and broccoli florets to the skillet. Stir everything together and cook for an additional 3-4 minutes until the broccoli is tender but still vibrant green.
  5. Pour the chicken broth into the skillet, allowing it to deglaze the pan and incorporate all those delicious flavors. Let it simmer for another 2-3 minutes, ensuring everything is heated through.
  6. Remove the skillet from the heat. Serve your Quick Chicken Strips with Broccoli Dinner hot, garnished with a sprinkle of additional herbs if desired.

Notes

  • Always ensure your chicken is fresh for the best flavor and texture.
  • Try to cut the chicken and vegetables into uniform sizes for even cooking.
  • If you prefer a little heat, add a pinch of red pepper flakes when cooking the chicken.
  • Feel free to customize the herbs according to your taste preferences; fresh herbs can make a big difference!
