  • 1 tablespoon chopped green onions
  • 1/2 teaspoon roasted sesame oil

  1. Preheat your oven to 425°F (220°C). A hot oven is crucial for achieving that perfect caramelization on the carrots.
  2. Peel the carrots and cut them into diagonal pieces, about 1/2-inch thick. This method not only looks appealing but also ensures even cooking.
  3. In a large mixing bowl, toss the carrot pieces with the cooking oil until they are well coated. This step is essential for getting that beautiful, roasted exterior.
  4. Spread the carrots out in a single layer on a baking sheet. Ensure they are not overcrowded to allow for even roasting. Roast in the preheated oven for about 25 to 30 minutes, or until tender and caramelized, tossing halfway through.
  5. While the carrots are roasting, combine the ponzu sauce, roasted sesame oil, and sesame seeds in a small bowl. Whisk them together until well mixed.
  6. Once the carrots are perfectly roasted, remove them from the oven and drizzle the ponzu vinaigrette over them. Toss gently to combine, then sprinkle with chopped green onions for that fresh flavor burst.

Notes

  • Use less oil – reduce the cooking oil to 1 teaspoon for fewer calories.
  • Skip the sesame oil – although it adds flavor, you can omit it if you prefer a lighter dish.
  • Serve over a bed of greens – instead of a heavier grain base, use leafy greens to make it lighter.
