Ingredients
  

  • 2 cups Lacinato kale stems removed and chopped
  • 4 cups cabbage shredded (green or red for color variation)
  • 1 medium carrot grated
  • 2-3 green onions chopped
  • 3 tablespoons fresh parsley or cilantro chopped
  • 1 batch Vegan Coleslaw Dressing

Method
 

  1. Start by washing the kale and cabbage thoroughly. Remove the tough stems from the kale and chop it into bite-sized pieces. Shred the cabbage using a sharp knife or a food processor, and grate the carrot.
  2. In a small bowl, whisk together your chosen ingredients for the Vegan Coleslaw Dressing. A simple combination of plant-based yogurt, apple cider vinegar, maple syrup, and a pinch of salt works wonders. Adjust the flavors to your liking!
  3. In a large mixing bowl, combine the chopped kale, shredded cabbage, grated carrot, chopped green onions, and parsley or cilantro. Pour the vegan dressing over the top and toss everything together gently until well coated.
  4. Let the slaw sit for about 10-15 minutes before serving. This allows the flavors to meld and the veggies to soften slightly, enhancing the overall taste.
