  • 1 red bell pepper red bell pepper cut into 1-inch cubes
  • 1/4 cup fresh mint minced
  • 1 1/2 cups fresh parsley minced
  • 1/4 cup fresh lemon juice
  • 1/2 cup olive oil
  • Kosher salt to taste
  • Fresh cracked pepper to taste

Stepwise Method: Quinoa Tabouli
  1. Begin by rinsing the quinoa under cold water in a fine mesh strainer. This step helps remove any bitterness from the quinoa.
  2. In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa and a pinch of salt. Reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it cool.
  3. While the quinoa is cooking, chop the tomatoes, scallions, and red bell pepper. Mince the fresh mint and parsley. The freshness of these ingredients is what makes Quinoa Tabouli shine!
